- 2 apples, peeled and diced
- 45g granulated sugar
- 1 tsp cinnamon
- 360g plain flour
- 200g granulated sugar
- 4 tsp baking powder
- 300ml whole milk
- 1 tsp vanilla
- 2 large eggs, lightly beaten
- 110g unsalted butter, melted
- 120g unsalted butter, melted (for cinnamon swirl)
- 150g light brown sugar
- 2 tbsp cinnamon (for cinnamon swirl)
- 200g icing sugar (for glaze)
- 40ml milk (for glaze)
Instructions
- Preheat the oven to 170C (fan) and grease an 8×10” tin.
- Combine the diced apples with 45g granulated sugar and 1 tsp cinnamon. Set aside to marinate while you prepare the batter.
- Whisk together the plain flour, 200g granulated sugar, and baking powder in a separate bowl.
- Mix the milk, vanilla, and eggs in another bowl. Gradually add the wet mixture to the dry ingredients, stirring until just incorporated. Fold in the melted butter until the batter is smooth.
- Pour half of the cake batter into the prepared tin, spreading it evenly to form the base layer.
- Spread the apple mixture evenly over the batter.
- Drizzle the cinnamon swirl mixture over the apples.
- Pour the remaining batter over the apple and cinnamon layer, covering everything gently.
- Bake in the preheated oven for 40-45 minutes, or until a skewer inserted into the center comes out clean.
- Whisk together the icing sugar and 40ml milk until smooth and drizzle over the cooled cake.
