Ingredients

  • 2 large handfuls baby spinach
  • 3 tablespoons milk (almond milk or regular)
  • 1 egg
  • ½ cup sugar
  • 1 teaspoon vanilla
  • ½ cup Greek yogurt (full fat)
  • 3 tablespoons oil
  • 1 cup white whole wheat flour
  • 1 teaspoon baking soda
  • â…” cup cocoa powder
  • ¼ teaspoon sea salt
  • ½ cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F.
  2. Combine the milk, bananas, and spinach in a high-powered blender.
  3. Transfer the mixture into a large mixing bowl.
  4. Crack the egg into the bowl and stir to whisk.
  5. Add the sugar, vanilla, oil, and Greek yogurt, mixing gently.
  6. Whisk together the flour, baking soda, sea salt, and cocoa powder in a separate bowl.
  7. Slowly add the dry ingredients to the wet mixture, folding gently.
  8. Stir in the dark chocolate chips, reserve some for topping.
  9. Line a muffin pan with liners and fill them about three-quarters full with batter.
  10. Bake for about 18-22 minutes or until a toothpick comes out clean.
