Description

A flavorful grilled chicken dish marinated with chipotle seasoning and topped with fresh mango salsa, perfect for summer evenings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons chipotle seasoning
  • Juice of 2 limes
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, minced
  • Fresh cilantro, chopped
  • Juice of 1 lime (for salsa)
  • Olive oil for grilling

Instructions

  1. Preheat the grill to medium-high heat.
  2. Combine the chipotle seasoning, lime juice, salt, and pepper in a bowl. Marinate the chicken in this mixture for at least 30 minutes.
  3. Prepare the mango salsa by mixing the diced mango, red onion, jalapeño, cilantro, and lime juice in another bowl. Season with salt to taste.
  4. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked.
  5. Let the chicken rest for a few minutes before slicing.
  6. Serve the grilled chicken topped with mango salsa, either over rice or in tacos.

Notes

For best flavor, try to marinate the chicken for 1-2 hours if time allows. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
