- 4 boneless, skinless chicken breasts
- 2 tablespoons chipotle seasoning
- Juice of 2 limes
- Salt and pepper to taste
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, minced
- Fresh cilantro, chopped
- Juice of 1 lime (for salsa)
- Olive oil for grilling
Instructions
- Preheat the grill to medium-high heat.
- Combine the chipotle seasoning, lime juice, salt, and pepper in a bowl. Marinate the chicken in this mixture for at least 30 minutes.
- Prepare the mango salsa by mixing the diced mango, red onion, jalapeño, cilantro, and lime juice in another bowl. Season with salt to taste.
- Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked.
- Let the chicken rest for a few minutes before slicing.
- Serve the grilled chicken topped with mango salsa, either over rice or in tacos.
Notes
For best flavor, try to marinate the chicken for 1-2 hours if time allows. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
