A delightful Chinese Lemon Chicken recipe with crispy chicken coated in a zesty lemon sauce, perfect for family dinners.

- 1 lb chicken thighs (cut into cubes)
- 1 tbsp soy sauce
- 2 tbsp cornstarch
- 1/3 cup lemon juice
- 3 tbsp sugar
- 1/2 cup water
- 2 tsp cornstarch
- 1 tsp lemon zest
- 1/4 cup flour
- 1/2 cup cornstarch
- Oil for frying
Instructions
- Combine the chicken cubes with soy sauce and 2 tablespoons of cornstarch in a bowl. Cover with plastic wrap and let marinate for 30 minutes.
- Mix together lemon juice, sugar, water, 2 teaspoons of cornstarch, and lemon zest in a small bowl. Set aside.
- Add the flour and 1/2 cup of cornstarch to the bowl of chicken. Toss gently to coat the chicken evenly.
- Heat oil about three inches deep in a pot over medium-high heat until it reaches 350 degrees.
- Fry the chicken in batches to ensure they don’t crowd the pot, frying until golden brown and cooked through.
- Transfer the cooked chicken pieces to a skillet.
- Pour in the prepared lemon sauce and toss the chicken pieces in the sauce, cooking until thickened, about a few seconds.
- Serve immediately with steamed rice and your favorite vegetables.
