Description

Ingredients

  • 5 bell peppers (any color you prefer)
  • 1 pound ground chicken
  • 1 cup cooked rice
  • 1 cup salsa
  • 1 cup shredded cheese (your favorite kind)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds, creating little edible vessels of joy.
  3. Mix together the ground chicken, cooked rice, salsa, and half of the cheese until everything is well incorporated.
  4. Stuff the mixture into each pepper until full, pressing it down gently to ensure they’re nicely packed.
  5. Place the stuffed peppers in a baking dish and top them with the remaining cheese, which will create a beautifully melted layer of goodness.
