A delicious and comforting Chicken Spinach Artichoke Pizza made with flatbread for a quick weeknight dinner.

- 4 pieces of flatbread
- 1/2 cup cream cheese (softened)
- 1 cup cooked shredded chicken
- 1 1/2 cups spinach (roughly chopped)
- 1/3 cup artichokes (drained and chopped)
- 1/4 cup diced red onion
- 1/4 cup sliced sun-dried tomatoes packed in oil (drained)
- 1 cup shredded part-skim mozzarella cheese
- 1/4 cup shredded Parmesan cheese
Instructions
- Preheat the oven to 450°F (180°C).
- Place the flatbread onto a metal baking sheet.
- Spread the softened cream cheese generously over each piece of flatbread.
- Top with the cooked shredded chicken.
- Sprinkle the roughly chopped spinach over the chicken.
- Next, scatter the chopped artichokes, diced red onion, and sun-dried tomatoes.
- Finish by sprinkling the shredded mozzarella and grated Parmesan cheese evenly over the top.
- Bake for 8-10 minutes until the cheese is melted and the crust is crispy.
