A delightful Chicken Scampi Pasta that combines tender chicken with a creamy, garlicky sauce, perfect for a quick weeknight dinner.

- 8 oz spaghetti or fettuccine
- 2 tbsp olive oil
- 1 lb chicken breast, sliced
- 4 cloves garlic, minced
- 1/4 cup chicken broth
- 1/4 cup vegetable broth (optional substitute for white wine)
- 1/2 cup unsalted butter
- 1 lemon, juiced and zested
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Grated Parmesan cheese (for serving)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced chicken breast, season with salt and pepper, and cook until browned and cooked through. Remove chicken from skillet and set aside.
- In the same skillet, add minced garlic and sauté until fragrant.
- Pour in chicken broth and vegetable broth (if using), letting it simmer for a few minutes.
- Reduce heat to low, add butter, lemon juice, and zest, stirring until melted and combined.
- Return the chicken to the skillet along with the cooked pasta, tossing everything together to coat with the sauce.
- Stir in chopped parsley and adjust seasoning as needed.
- Serve hot with grated Parmesan cheese on top.
Notes
You can slice the chicken and prep garlic in advance. Store them in airtight containers to save time. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently on the stove.
