Description
A creamy and comforting Chicken Florentine recipe, perfect for busy weeknights and family gatherings.
Ingredients
Scale
- 4 chicken breasts
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tablespoon lemon juice (optional)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then place them in the skillet. Cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken and set aside.
- Add the fresh spinach to the same skillet and sauté until wilted.
- Stir in the heavy cream and chicken broth, bringing the mixture to a gentle simmer.
- Add the grated Parmesan cheese gradually, stirring until melted and the sauce thickens.
- If using lemon juice, add it now for a zesty finish. Return the chicken to the skillet, ensuring it is well coated with the sauce.
- Serve hot, garnished with fresh parsley.
Notes
Make-ahead advice: Cook chicken and sauce separately for best texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
