Ingredients

  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon juice (optional)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then place them in the skillet. Cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken and set aside.
  2. Add the fresh spinach to the same skillet and sauté until wilted.
  3. Stir in the heavy cream and chicken broth, bringing the mixture to a gentle simmer.
  4. Add the grated Parmesan cheese gradually, stirring until melted and the sauce thickens.
  5. If using lemon juice, add it now for a zesty finish. Return the chicken to the skillet, ensuring it is well coated with the sauce.
  6. Serve hot, garnished with fresh parsley.
