- 2 chicken breasts
- 1 cup fresh tomatoes, diced
- 1/2 cup pesto
- 2 tablespoons balsamic glaze
- 1 cup mozzarella cheese, shredded
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a skillet over medium heat. Season the chicken breasts generously with salt and pepper.
- Add the seasoned chicken to the skillet. Cook for about 6-7 minutes on each side until they’re golden brown and fully cooked through.
- Once cooked, remove the chicken from the skillet and set it aside to rest.
- In the same skillet, toss in your diced tomatoes and cook for about 2 minutes until they start releasing their juices.
- Stir in the pesto and balsamic glaze, bringing everything to a gentle simmer that fills your kitchen with mouthwatering aromas.
- Return the chicken to the skillet, spooning the simmering tomato mixture generously over the top. Then, sprinkle shredded mozzarella cheese all over.
- Cover the skillet and cook for an additional 5 minutes, letting the cheese melt and become wonderfully gooey.
- Serve warm, and enjoy the symphony of flavors!
Notes
You can prepare the chicken and tomato mixture in advance and store them separately. Use store-bought rotisserie chicken for convenience.
