Description

A cozy and comforting dinner featuring tender chicken breasts, fresh tomatoes, creamy mozzarella, and vibrant basil pesto.


Ingredients

  • 2 chicken breasts
  • 1 cup fresh tomatoes, diced
  • 1/2 cup pesto
  • 2 tablespoons balsamic glaze
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a skillet over medium heat. Season the chicken breasts generously with salt and pepper.
  2. Add the seasoned chicken to the skillet. Cook for about 6-7 minutes on each side until they’re golden brown and fully cooked through.
  3. Once cooked, remove the chicken from the skillet and set it aside to rest.
  4. In the same skillet, toss in your diced tomatoes and cook for about 2 minutes until they start releasing their juices.
  5. Stir in the pesto and balsamic glaze, bringing everything to a gentle simmer that fills your kitchen with mouthwatering aromas.
  6. Return the chicken to the skillet, spooning the simmering tomato mixture generously over the top. Then, sprinkle shredded mozzarella cheese all over.
  7. Cover the skillet and cook for an additional 5 minutes, letting the cheese melt and become wonderfully gooey.

Notes

You can prepare the chicken and tomato mixture in advance and store them separately. Use store-bought rotisserie chicken for convenience.
