Description

Warm, chewy peanut butter cookies that evoke cozy childhood memories and are perfect for sharing.

Ingredients

Scale
  • 1 cup peanut butter
  • 1 cup almond flour
  • 1 cup sugar (or brown sugar)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the peanut butter, almond flour, sugar, egg, vanilla extract, baking soda, and salt. Mix until fully combined.
  3. Scoop tablespoon-sized balls of the dough onto a baking sheet lined with parchment paper, making sure to leave some space between each ball.
  4. Slightly flatten each dough ball with a fork, creating a delightful crisscross pattern on top.
  5. Bake in the preheated oven for 10-12 minutes, or until the cookies are lightly golden and smell heavenly!
  6. Remove from the oven and let them cool on the sheet for a few minutes before gently transferring them to a wire rack to cool completely.

Notes

Feel free to customize with chocolate chips, nuts, or other mix-ins. Store leftovers in an airtight container for up to a week.
