Description

A cozy and comforting dish featuring crispy potatoes, seasoned beef, and melted cheese, perfect for weeknight dinners.


Ingredients

  • 2 pounds russet potatoes, peeled and small diced (900 g)
  • 34 tablespoons oil (4560 mL)
  • 1 1/2 teaspoons salt (7 g)
  • 1/2 teaspoon pepper (1 g)
  • 1 teaspoon garlic powder (3 g)
  • 1 teaspoon onion powder (3 g)
  • 1 pound ground beef (450 g)
  • 1 packet taco seasoning
  • Water, as directed on taco seasoning packet
  • 8-ounce bag Mexican shredded cheese (225 g)
  • Optional toppings: pico de gallo, guacamole, sour cream

Instructions

  1. Toss the diced russet potatoes in a mixing bowl with the oil, salt, pepper, garlic powder, and onion powder until each piece is evenly coated.
  2. Preheat your air fryer to 400°F (200°C) and add the seasoned potatoes. Air fry for 18-20 minutes, shaking the basket 2-3 times during cooking.
  3. Brown the ground beef in a skillet over medium heat, breaking it into small pieces as it cooks. Drain any excess grease.
  4. Add the taco seasoning and water to the cooked beef, simmer for about 5 minutes.
  5. Layer the crispy cooked potatoes on a serving plate. Top with the seasoned beef, cheese, and desired toppings.

Notes

You can prepare the seasoned potatoes and beef a day in advance. Leftovers can be stored in an airtight container for up to 3 days.
