- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned, about 5 minutes.
- Add the chopped onion, diced bell pepper, and minced garlic to the skillet. Sauté until the vegetables soften, about 3-4 minutes.
- Stir in the Cajun seasoning until well mixed, then add the orzo and chicken broth. Bring to a boil.
- Reduce the heat, cover, and let it simmer for about 10 minutes until the orzo is cooked and the liquid is absorbed.
- Pour in the heavy cream, mixing well to create a smooth texture. Cook for an additional 2-3 minutes.
- Season with salt and pepper to your liking.
- Serve hot, garnished with fresh parsley.
