Ingredients

  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned, about 5 minutes.
  2. Add the chopped onion, diced bell pepper, and minced garlic to the skillet. Sauté until the vegetables soften, about 3-4 minutes.
  3. Stir in the Cajun seasoning until well mixed, then add the orzo and chicken broth. Bring to a boil.
  4. Reduce the heat, cover, and let it simmer for about 10 minutes until the orzo is cooked and the liquid is absorbed.
  5. Pour in the heavy cream, mixing well to create a smooth texture. Cook for an additional 2-3 minutes.
  6. Season with salt and pepper to your liking.
  7. Serve hot, garnished with fresh parsley.
