Description
A warm and comforting bowl of rice infused with the golden sweetness of corn, perfect for busy weeknight dinners.
Ingredients
Scale
- 2 cups of rice
- 1 cup of corn (fresh or frozen)
- 3 tablespoons of butter
- 1 teaspoon of salt
- 4 cups of water or broth
- 1 tablespoon of chopped parsley (optional)
Instructions
- Rinse the rice under cold water until the water runs clear, ensuring it’s free of excess starch.
- Bring the water or broth to a boil in a large pot, letting the base flavors simmer into the rice.
- Add the rice and salt, then lower the heat to a simmer and cover. Cook for about 15-20 minutes or until the rice is tender and the liquid is absorbed.
- Melt the butter in a skillet over medium heat, allowing its creamy richness to turn golden.
- Add the corn to the skillet and cook for about 5 minutes until it’s tender and fragrant.
- Fluff the cooked rice with a fork and add the corn mixture. Stir gently to combine and let those flavors meld together.
- Garnish with chopped parsley if desired and serve warm.
