Description

Ingredients

  • 1 cup of corn (fresh or frozen)
  • 3 tablespoons of butter
  • 1 teaspoon of salt
  • 4 cups of water or broth
  • 1 tablespoon of chopped parsley (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear, ensuring it’s free of excess starch.
  2. Bring the water or broth to a boil in a large pot, letting the base flavors simmer into the rice.
  3. Add the rice and salt, then lower the heat to a simmer and cover. Cook for about 15-20 minutes or until the rice is tender and the liquid is absorbed.
  4. Melt the butter in a skillet over medium heat, allowing its creamy richness to turn golden.
  5. Add the corn to the skillet and cook for about 5 minutes until it’s tender and fragrant.
  6. Fluff the cooked rice with a fork and add the corn mixture. Stir gently to combine and let those flavors meld together.
  7. Garnish with chopped parsley if desired and serve warm.
