Creamy cheesecake bars with a vibrant blueberry swirl, perfect for gatherings or cozy nights in.
Ingredients
Scale
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar, divided
- 4 (8 oz) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 2 cups fresh blueberries
- 1/2 cup water
- 1/4 cup lemon juice
Instructions
- Preheat the oven to 325°F (160°C) and grease a 9×13-inch baking dish.
- Mix graham cracker crumbs with melted butter and 1/4 cup sugar. Press the mixture into the bottom of the baking dish to form a crust.
- Beat cream cheese with remaining sugar and vanilla until smooth and creamy in a large mixing bowl.
- Add eggs one at a time, mixing well after each addition until fully incorporated.
- Pour the cheesecake batter over the crust, spreading it evenly.
- Combine blueberries, 1/4 cup sugar, water, and lemon juice in a saucepan. Cook over medium heat until the blueberries burst and the sauce thickens slightly.
- Swirl the blueberry sauce into the cheesecake batter gently to create marbled patterns.
- Bake for 45-50 minutes or until set and the edges are lightly golden.
- Chill in the refrigerator for at least 240 minutes before slicing into bars.
- Serve, enjoy, and watch everyone smile as they savor each rich, creamy bite!
