Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar, divided
  • 4 (8 oz) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 cups fresh blueberries
  • 1/2 cup water
  • 1/4 cup lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a 9×13-inch baking dish.
  2. Mix graham cracker crumbs with melted butter and 1/4 cup sugar. Press the mixture into the bottom of the baking dish to form a crust.
  3. Beat cream cheese with remaining sugar and vanilla until smooth and creamy in a large mixing bowl.
  4. Add eggs one at a time, mixing well after each addition until fully incorporated.
  5. Pour the cheesecake batter over the crust, spreading it evenly.
  6. Combine blueberries, 1/4 cup sugar, water, and lemon juice in a saucepan. Cook over medium heat until the blueberries burst and the sauce thickens slightly.
  7. Swirl the blueberry sauce into the cheesecake batter gently to create marbled patterns.
  8. Bake for 45-50 minutes or until set and the edges are lightly golden.
  9. Chill in the refrigerator for at least 240 minutes before slicing into bars.
