  • 1 pound ground beef (80/20)
  • 8 small flour tortillas
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 8 slices American cheese
  • ¾ cup shredded iceberg lettuce
  • ½ cup dill pickle chips
  • ¼ cup finely chopped white onion
  • 1 tablespoon neutral oil (for skillet)
  • ¾ cup mayonnaise
  • 3 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon white vinegar
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions

  1. Make the special sauce: In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle relish, vinegar, paprika, garlic powder, and onion powder until creamy and well combined. Refrigerate until ready to use.
  2. Prepare the tacos: Divide the ground beef into 8 equal portions. Press a thin, even layer of beef onto one side of each tortilla, and season them with salt and pepper.
  3. Cook the beef: Heat neutral oil in a large skillet over medium-high heat. Once hot, carefully place the tortillas beef-side down into the skillet. Cook for 3–4 minutes until the beef is golden brown.
  4. Flip & add cheese: Flip the tacos over and add a slice of American cheese to each. Cook for an additional 1–2 minutes until the cheese is beautifully melted.
  5. Assemble: Remove the tacos from the skillet and layer with shredded lettuce, dill pickle chips, and chopped onions. Drizzle the special sauce over the top for that creamy finish.
  6. Serve: Fold the tacos in half, serve immediately, and enjoy the warm crunch and melty goodness!
