Description

A creamy, cheesy breakfast casserole filled with crispy tater tots, perfect for lazy weekends or holiday gatherings.


Ingredients

  • 1 bag tater tots
  • 8 eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 pound breakfast sausage (optional)
  • Salt and pepper to taste
  • 1/2 cup chopped onions (optional)
  • 1/2 cup chopped bell peppers (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the breakfast sausage in a skillet over medium heat until browned. Drain excess fat.
  3. Whisk together the eggs and milk in a large bowl until creamy. Season with salt and pepper.
  4. Layer the tater tots evenly in a greased baking dish.
  5. If using sausage, add it on top of the tater tots, then sprinkle chopped onions and bell peppers, followed by half of the cheese.
  6. Pour the egg mixture over the ingredients, ensuring it covers all.
  7. Sprinkle the remaining cheese on top.
  8. Bake for 35 to 40 minutes, or until eggs are set and the top is golden.
  9. Cool for a few minutes before serving.

Notes

Make ahead by assembling the casserole the night before. Cut leftovers into portions and freeze for later.
