- 1 bag tater tots
- 8 eggs
- 1 cup milk
- 1 cup shredded cheese (cheddar or your choice)
- 1 pound breakfast sausage (optional)
- Salt and pepper to taste
- 1/2 cup chopped onions (optional)
- 1/2 cup chopped bell peppers (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the breakfast sausage in a skillet over medium heat until browned. Drain excess fat.
- Whisk together the eggs and milk in a large bowl until creamy. Season with salt and pepper.
- Layer the tater tots evenly in a greased baking dish.
- If using sausage, add it on top of the tater tots, then sprinkle chopped onions and bell peppers, followed by half of the cheese.
- Pour the egg mixture over the ingredients, ensuring it covers all.
- Sprinkle the remaining cheese on top.
- Bake for 35 to 40 minutes, or until eggs are set and the top is golden.
- Cool for a few minutes before serving.
Notes
Make ahead by assembling the casserole the night before. Cut leftovers into portions and freeze for later.
