Description

A creamy and comforting take on mac and cheese made with roasted cauliflower for a healthy twist.


Ingredients

  • 1 head cauliflower, cut into small bite-size pieces
  • 2 Tbsp. olive oil
  • 1/4 tsp. freshly ground black pepper
  • 1/2 tsp. salt
  • 1 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1 1/2 cups heavy whipping cream
  • 4 ounces cream cheese, cut into small cubes
  • 1 cup shredded cheddar cheese
  • 1 cup gruyere cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 tsp. paprika (optional)

Instructions

  1. Preheat your oven to 425 degrees F. Line a baking sheet with foil or parchment paper for easy cleanup.
  2. Spread the cauliflower pieces on the prepared baking sheet. Drizzle with olive oil, and sprinkle with salt and pepper.
  3. Roast the cauliflower in the oven for 15-20 minutes, or until softened and lightly golden.
  4. Add the heavy cream and cream cheese to a large pot over low heat, whisking until melted.
  5. Gradually add in the shredded cheddar, gruyere, and Monterey Jack cheeses, stirring until smooth.
  6. Sprinkle in the garlic powder, onion powder, and additional spices. Stir until you achieve a luscious texture.
  7. Remove the pot from heat and whisk vigorously to make it creamy!
  8. Gently fold in the roasted cauliflower pieces until well-coated.
  9. Serve immediately, topping with a dash of paprika if desired!
