- 4 cups fresh broccoli florets, chopped into bite-sized pieces
- 1 cup shredded carrots
- 1/2 cup chopped red onion
- 3/4 cup turkey bacon, cooked and crumbled
- 1/2 cup raisins or dried cranberries
- 3/4 cup sunflower seeds
- 1 cup Greek yogurt
- 1/4 cup honey
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- Begin by washing the broccoli thoroughly. Pat it dry and chop it into bite-sized pieces.
- In a large mixing bowl, add the chopped broccoli, shredded carrots, and chopped red onion. Give it a gentle toss to combine.
- Next, cook the turkey bacon in a pan until golden and fragrant. Let it cool and crumble it into the salad bowl.
- Add the raisins (or dried cranberries) and sunflower seeds to the salad.
- In a separate bowl, whisk together the Greek yogurt, honey, and apple cider vinegar. Season to taste with salt and pepper.
- Pour the dressing over the salad and mix gently until coated.
- Cover and refrigerate for at least 30 minutes before serving.
Notes
This salad is even better the next day! Feel free to replace turkey bacon with crispy chickpeas for a vegetarian option.
