Ingredients

  • 4 cups fresh broccoli florets, chopped into bite-sized pieces
  • 1 cup shredded carrots
  • 1/2 cup chopped red onion
  • 3/4 cup turkey bacon, cooked and crumbled
  • 1/2 cup raisins or dried cranberries
  • 3/4 cup sunflower seeds
  • 1 cup Greek yogurt
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Begin by washing the broccoli thoroughly. Pat it dry and chop it into bite-sized pieces.
  2. In a large mixing bowl, add the chopped broccoli, shredded carrots, and chopped red onion. Give it a gentle toss to combine.
  3. Next, cook the turkey bacon in a pan until golden and fragrant. Let it cool and crumble it into the salad bowl.
  4. Add the raisins (or dried cranberries) and sunflower seeds to the salad.
  5. In a separate bowl, whisk together the Greek yogurt, honey, and apple cider vinegar. Season to taste with salt and pepper.
  6. Pour the dressing over the salad and mix gently until coated.
  7. Cover and refrigerate for at least 30 minutes before serving.

Notes

This salad is even better the next day! Feel free to replace turkey bacon with crispy chickpeas for a vegetarian option.
