Description

Crispy, seasoned baby potatoes that make a perfect breakfast or brunch dish, sure to be a family favorite.


Ingredients

  • 2 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried rosemary or thyme
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine the halved baby potatoes and olive oil in a large bowl.
  3. Sprinkle garlic powder, paprika, onion powder, rosemary or thyme, salt, and pepper over the potatoes and toss to coat.
  4. Spread the seasoned potatoes on a baking sheet lined with parchment paper.
  5. Bake for about 25-30 minutes, flipping halfway through, until golden and crispy.
  6. Garnish with fresh parsley before serving.

Notes

Make ahead by cutting and seasoning the potatoes the night before. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
