Description

This Banana Pudding Cheesecake combines the comforting flavors of classic banana pudding and the richness of cheesecake into an indulgent dessert.


Ingredients

  • 2 cups crushed vanilla wafers
  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1 cup mashed ripe bananas
  • 1 cup whipped cream
  • 1/2 cup banana slices for garnish
  • Additional vanilla wafers for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the crushed vanilla wafers with melted butter until combined. Press this mixture into the bottom of a greased springform pan to form the crust.
  3. Beat together cream cheese, sugar, and vanilla extract until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition for a perfectly blended batter.
  5. Mix in the mashed bananas until well incorporated.
  6. Pour the cheesecake batter over the crust in the springform pan, spreading evenly.
  7. Bake for 50-60 minutes, or until the center is set and just slightly jiggly.
  8. Remove from oven and allow to cool. Refrigerate for at least 4 hours or overnight.
  9. Top with whipped cream, banana slices, and additional vanilla wafers before serving.

Notes

Let cream cheese and eggs come to room temperature before mixing for a smoother batter.
