A cozy and flavorful meatloaf made with ground beef, turkey bacon, Swiss cheese, and mushrooms, perfect for family dinners.

- 2 lbs ground beef 80/20
- 1 cup shredded Swiss cheese
- 1 cup cooked turkey bacon, chopped
- 1 cup mushrooms, sliced and sautéed
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup breadcrumbs
- 2 tbsp Worcestershire sauce
- Salt and pepper, to taste
- Fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking sheet with foil or use a loaf pan.
- Cook the turkey bacon in a skillet until crispy, then remove and set aside.
- Add the sliced mushrooms to the pan and sauté until browned, then remove from heat.
- In a large bowl, combine the ground beef, eggs, breadcrumbs, onion, garlic, Worcestershire sauce, salt, and pepper; mix gently.
- Fold in half of the shredded Swiss cheese evenly.
- Shape the mixture into a loaf on a baking sheet or press into a loaf pan.
- Top the loaf with sautéed mushrooms, turkey bacon, and remaining Swiss cheese.
- Bake for 45–55 minutes, until internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing. Garnish with fresh parsley and serve warm.
Notes
Make-ahead mixture can be prepared a day in advance. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
