Description

A bright, vibrant salad bursting with summer flavors, perfect for easy weeknight dinners or potlucks.


Ingredients

  • 2 cups sweet corn (fresh, canned, or frozen)
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 bell pepper (any color), diced
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sweet corn, diced avocado, cherry tomatoes, red onion, bell pepper, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately, or let it chill in the refrigerator for 30 minutes before serving.

Notes
