Cozy and delicious Strawberry Crumb Bars perfect for summer gatherings or as an afternoon treat.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup rolled oats
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a mixing bowl, combine the flour, softened butter, granulated sugar, and salt. Mix until crumbly.
- Stir in the rolled oats until combined.
- Press half of the mixture into the bottom of the greased baking dish to form a crust.
- In another bowl, mix the strawberries with brown sugar, lemon juice, and cornstarch until coated.
- Spread the strawberry mixture evenly over the crust.
- Crumble the remaining oat mixture over the strawberries.
- Bake for 30-35 minutes until golden brown.
- Allow to cool completely before cutting into squares.
Notes
For cleaner slices, use a sharp knife and let the bars cool completely before cutting. They can also be made a day in advance and stored in the fridge.
