Description

Cozy and delicious Strawberry Crumb Bars perfect for summer gatherings or as an afternoon treat.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1 cup fresh strawberries, hulled and sliced
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine the flour, softened butter, granulated sugar, and salt. Mix until crumbly.
  3. Stir in the rolled oats until combined.
  4. Press half of the mixture into the bottom of the greased baking dish to form a crust.
  5. In another bowl, mix the strawberries with brown sugar, lemon juice, and cornstarch until coated.
  6. Spread the strawberry mixture evenly over the crust.
  7. Crumble the remaining oat mixture over the strawberries.
  8. Bake for 30-35 minutes until golden brown.
  9. Allow to cool completely before cutting into squares.

Notes

For cleaner slices, use a sharp knife and let the bars cool completely before cutting. They can also be made a day in advance and stored in the fridge.
