Description

A delightful treat filled with cozy flavors and perfect for sharing, these ginger molasses cookies are a must for chilly afternoons.


Ingredients

  • 2 ¼ Cups all-purpose flour
  • 1 Cup dark brown sugar
  • ¾ Cup unsalted butter (softened)
  • ¼ Cup molasses (light flavored)
  • 1 large egg
  • 2 Teaspoons baking soda
  • 1 ¼ Teaspoons ground ginger
  • 1 Teaspoon ground cinnamon
  • ¼ Teaspoon salt
  • ¼ Teaspoon ground nutmeg
  • ¼ Cup white sugar (for rolling, more if needed)

Instructions

  1. Preheat your oven to 375°F and prepare a couple of large baking sheets lined with parchment paper.
  2. Cream together the dark brown sugar and softened butter in a large bowl until light and airy—about 3 to 4 minutes.
  3. Stream in the molasses and mix until combined, then add the large egg and mix until fully combined.
  4. Sift together the flour, salt, baking soda, and spices into the butter mixture and combine on low speed until a thick dough forms.
  5. Roll about ¼ cup of dough into a ball and then roll it in white sugar until fully coated.
  6. Flatten the dough ball slightly and repeat the process for remaining dough, leaving space between cookies.
  7. Bake the cookies for 10 to 15 minutes until edges are set and cookies have spread.
  8. Cool the cookies on a wire rack or enjoy them warm.

Notes

For chewy cookies, avoid overbaking and remove them from the oven when just set in the middle.
