- ¾ Cup unsalted butter (softened)

- 1 large egg
- 2 Teaspoons baking soda

- 1 Teaspoon ground cinnamon
- ¼ Teaspoon salt
- ¼ Teaspoon ground nutmeg
- ¼ Cup white sugar (for rolling, more if needed)
Instructions
- Preheat your oven to 375°F and prepare a couple of large baking sheets lined with parchment paper.
- Cream together the dark brown sugar and softened butter in a large bowl until light and airy—about 3 to 4 minutes.
- Stream in the molasses and mix until combined, then add the large egg and mix until fully combined.
- Sift together the flour, salt, baking soda, and spices into the butter mixture and combine on low speed until a thick dough forms.
- Roll about ¼ cup of dough into a ball and then roll it in white sugar until fully coated.
- Flatten the dough ball slightly and repeat the process for remaining dough, leaving space between cookies.
- Bake the cookies for 10 to 15 minutes until edges are set and cookies have spread.
- Cool the cookies on a wire rack or enjoy them warm.
Notes
For chewy cookies, avoid overbaking and remove them from the oven when just set in the middle.
