Instructions
- Preheat the oven to 375°F (190°C).
- Mix the grated sweet potatoes with a pinch of salt and spread evenly in a greased pie dish to form a crust.
- Bake the sweet potato crust for about 15-20 minutes until slightly golden.
- Whisk together the eggs, milk, salt, and pepper until creamy and well combined.
- Stir in the chopped spinach and crumbled goat cheese, along with any other veggies you desire.
- Pour the egg mixture into the baked sweet potato crust, spreading it evenly.
- Bake for an additional 25-30 minutes, or until the quiche is set and the top is golden and slightly puffed.
- Allow to cool slightly before slicing and serving.
