Ingredients

  • 4 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup goat cheese, crumbled
  • 1/2 cup milk or cream
  • Salt and pepper to taste
  • Olive oil for greasing
  • Optional: other veggies (e.g., bell peppers, onions, mushrooms)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the grated sweet potatoes with a pinch of salt and spread evenly in a greased pie dish to form a crust.
  3. Bake the sweet potato crust for about 15-20 minutes until slightly golden.
  4. Whisk together the eggs, milk, salt, and pepper until creamy and well combined.
  5. Stir in the chopped spinach and crumbled goat cheese, along with any other veggies you desire.
  6. Pour the egg mixture into the baked sweet potato crust, spreading it evenly.
  7. Bake for an additional 25-30 minutes, or until the quiche is set and the top is golden and slightly puffed.
  8. Allow to cool slightly before slicing and serving.
