- 2 cups cooked chicken, shredded
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup jalapeños, diced (fresh or pickled)
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tsp chili powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic; sauté until soft and fragrant, about 3-4 minutes.
- Stir in the diced jalapeños and cook for another minute.
- Add the shredded chicken, cream of chicken soup, and chicken broth. Mix well and bring to a gentle simmer.
- Stir in the softened cream cheese and shredded cheddar cheese until melted and combined.
- Season with chili powder, salt, and pepper to taste. Serve hot and enjoy!
