- 1/2 cup Peanut Butter
- 1/2 cup Butter (softened)
- 1/3 cup Brown Sugar
- 1/3 cup White Sugar
- 1 1/4 cups All-purpose Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 tsp Vanilla Extract
- 1 Egg
Instructions
- Cream together the brown sugar, white sugar, peanut butter, and softened butter until smooth and creamy.
- Beat in the egg and vanilla extract until fully incorporated.
- Combine the all-purpose flour, baking soda, and salt in another bowl until evenly mixed.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Transfer the dough to a bowl, cover with plastic wrap, and chill for about one hour.
- Preheat your oven to 375°F and line a baking sheet with parchment paper.
- Roll 1-1/2 tablespoons of dough into a ball and place on the baking sheet; gently press down with a fork.
- Bake for 9 to 11 minutes or until edges are golden but centers are soft.
- Transfer the cookies to a wire cooling rack and enjoy the aroma!

These cookies can be made ahead of time, stored in an airtight container for up to a week, or frozen for future baking.
