- Chill the dough for at least 60 minutes in the refrigerator to firm up.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out the chilled dough to about 1/4-inch thickness and cut into gingerbread men shapes.
- Place the cut-outs on the prepared baking sheet and bake for 10-12 minutes until the edges are firm.
- Allow the cookies to cool completely on a wire rack before decorating.
