Instructions

  1. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt until well combined and aromatic.
  2. In a large mixing bowl, cream the softened butter and brown sugar until fluffy, about 2-3 minutes.
  3. Beat in the molasses, egg, and vanilla extract until thoroughly combined and smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  5. Chill the dough for at least 60 minutes in the refrigerator to firm up.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out the chilled dough to about 1/4-inch thickness and cut into gingerbread men shapes.
  8. Place the cut-outs on the prepared baking sheet and bake for 10-12 minutes until the edges are firm.
  9. Allow the cookies to cool completely on a wire rack before decorating.
