Description

A comforting dish featuring golden-brown chicken smothered in a creamy sauce with spinach, mushrooms, and crispy turkey bacon.


Ingredients

Scale
  • 4 chicken thighs or breasts
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 4 strips of turkey bacon, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil
  • Pasta, rice, or mashed potatoes for serving

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the drippings in the pan.
  2. Season the chicken with salt, pepper, garlic powder, and onion powder. In the same skillet, add a splash of olive oil and sear the chicken on both sides until golden brown. Remove the chicken and set aside.
  3. In the same skillet, add the sliced mushrooms and cook until tender, about 3-4 minutes. Stir in the fresh spinach and allow it to wilt.
  4. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer, then return the chicken to the skillet.
  5. Cover the skillet and cook on low heat for 15-20 minutes, or until the chicken is cooked through and tender.
  6. Gently stir in the crispy turkey bacon, mixing everything together.
  7. Serve the smothered chicken over a bed of pasta, rice, or fluffy mashed potatoes.

Notes

You can prepare the chicken and sauce a day before and reheat when ready to serve. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
