- 4 chicken thighs or breasts
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 4 strips of turkey bacon, chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil
- Pasta, rice, or mashed potatoes for serving
Instructions
- In a large skillet, cook the turkey bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the drippings in the pan.
- Season the chicken with salt, pepper, garlic powder, and onion powder. In the same skillet, add a splash of olive oil and sear the chicken on both sides until golden brown. Remove the chicken and set aside.
- In the same skillet, add the sliced mushrooms and cook until tender, about 3-4 minutes. Stir in the fresh spinach and allow it to wilt.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer, then return the chicken to the skillet.
- Cover the skillet and cook on low heat for 15-20 minutes, or until the chicken is cooked through and tender.
- Gently stir in the crispy turkey bacon, mixing everything together.
- Serve the smothered chicken over a bed of pasta, rice, or fluffy mashed potatoes.
Notes
You can prepare the chicken and sauce a day before and reheat when ready to serve. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
