Description

A warm, cozy dish featuring tender chicken in a rich, creamy tomato sauce, perfect for chilly evenings.

Ingredients

Scale
  • 4 chicken breasts
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Mix together the diced tomatoes, heavy cream, garlic, basil, salt, pepper, and Italian seasoning in a bowl until well combined.
  3. Pour the mixture over the chicken breasts, ensuring they’re covered in the creamy sauce.
  4. Cover and cook on low for 360-420 minutes or on high for 180-240 minutes until the chicken is cooked through and tender.
  5. Shred the chicken in the sauce once done, allowing it to soak up the rich flavor, and serve over pasta or rice.

Notes

This dish is make-ahead friendly and stores beautifully in the fridge for up to 3 days. For a lighter version, substitute heavy cream with half-and-half or coconut milk.
