Description

A cozy and comforting slow cooker recipe that features tender chicken thighs simmered in a rich, creamy sauce of tomato and spices.


Ingredients

  • 1.5 lbs chicken thighs, boneless and skinless
  • 1 cup tomato puree
  • 1 cup heavy cream
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp butter
  • 1 tsp garam masala
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Melt the butter in a slow cooker and add the chopped onion, garlic, and ginger. Cook until the onion becomes translucent.
  2. Add the chicken thighs, tomato puree, heavy cream, and spices to the slow cooker.
  3. Stir gently to combine all the ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fully cooked and tender.
  5. Shred the chicken in the sauce and stir to blend everything before serving.
  6. Serve over rice and garnish with fresh cilantro.

Notes

For extra nutrition, add chopped vegetables like bell peppers or spinach. Experiment with flavor by adding lemon juice or coconut milk.
