Description

Ingredients

  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1 cup rolled oats
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the peanut butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla extract to the mixture and stir until well combined.
  4. Combine the rolled oats, baking soda, and salt in a separate bowl. Gradually add this dry mixture to the wet mixture, stirring until just combined.
  5. Drop tablespoons of dough onto a baking sheet lined with parchment paper, leaving space in between each cookie.
  6. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  8. For freezing, scoop the dough onto a baking sheet and freeze until solid, then place in a freezer bag for up to 3 months.
