Ingredients

- 2 cups of small potatoes (Yukon Gold or baby potatoes)
- 2 cups of fresh green beans
- 3 cloves of garlic, minced
- 3 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 teaspoon of your choice of seasonings (such as rosemary or thyme)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and cut the potatoes into bite-sized pieces.
- Trim the ends of the green beans.
- Toss the potatoes and green beans with olive oil, minced garlic, salt, pepper, and any additional seasonings you prefer in a large bowl.
- Spread the mixture on a baking sheet in a single layer, ensuring that the vegetables can roast evenly.
- Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and golden brown, stirring halfway through for even cooking.
- Serve warm as a lovely side dish to any family meal.
Notes
Prep vegetables a day in advance for quicker cooking time. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
