Description

A comforting side dish of oven-roasted potatoes and green beans, perfectly seasoned and golden brown.


Ingredients

  • 2 cups of small potatoes (Yukon Gold or baby potatoes)
  • 2 cups of fresh green beans
  • 3 cloves of garlic, minced
  • 3 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 teaspoon of your choice of seasonings (such as rosemary or thyme)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut the potatoes into bite-sized pieces.
  3. Trim the ends of the green beans.
  4. Toss the potatoes and green beans with olive oil, minced garlic, salt, pepper, and any additional seasonings you prefer in a large bowl.
  5. Spread the mixture on a baking sheet in a single layer, ensuring that the vegetables can roast evenly.
  6. Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and golden brown, stirring halfway through for even cooking.
  7. Serve warm as a lovely side dish to any family meal.

Notes

Prep vegetables a day in advance for quicker cooking time. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
