Description

A comforting one-pan dish featuring honey-glazed kielbasa and vibrant vegetables, perfect for busy weeknights.


Ingredients

  • 1 pound Kielbasa, cut into 1-inch pieces
  • 2 tablespoons Honey
  • 3 cloves Garlic, minced
  • 2 tablespoons Soy Sauce
  • 1 each Bell Peppers (red & yellow), chopped
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes, halved
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the honey, minced garlic, and soy sauce in a large mixing bowl.
  3. Add the kielbasa to the bowl, tossing it in the honey garlic mixture.
  4. Prepare your veggies: chop the bell peppers and slice the baby potatoes in half.
  5. Arrange the kielbasa, veggies, and baby carrots in a single layer on a large baking tray.
  6. Drizzle with olive oil and sprinkle with salt and pepper.
  7. Bake for 25-30 minutes until kielbasa is sizzling and veggies are tender.
  8. Remove from the oven and sprinkle fresh parsley or green onions on top.
  9. Serve warm and enjoy!

Notes

For variations, try zesty citrus, fresh herbs, or a spicy kick with red pepper flakes.
