- 1 pound Kielbasa, cut into 1-inch pieces
- 2 tablespoons Honey
- 3 cloves Garlic, minced
- 2 tablespoons Soy Sauce
- 1 each Bell Peppers (red & yellow), chopped
- 1 cup Baby Carrots
- 1 pound Baby Potatoes, halved
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the honey, minced garlic, and soy sauce in a large mixing bowl.
- Add the kielbasa to the bowl, tossing it in the honey garlic mixture.
- Prepare your veggies: chop the bell peppers and slice the baby potatoes in half.
- Arrange the kielbasa, veggies, and baby carrots in a single layer on a large baking tray.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Bake for 25-30 minutes until kielbasa is sizzling and veggies are tender.
- Remove from the oven and sprinkle fresh parsley or green onions on top.
- Serve warm and enjoy!
