Description

A vibrant and comforting dish with the warm flavors of turmeric and cumin, perfect for any occasion.


Ingredients

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 onion, chopped
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 2 tablespoons olive oil
  • 1/4 cup toasted pine nuts
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the olive oil in a pan over medium heat. Add the chopped onion, turmeric, and cumin; sauté until the onion is translucent.
  2. Add the rice and stir until it’s well-coated with the oil and spices.
  3. Pour in the vegetable broth, sprinkle with salt and pepper, and bring to a boil.
  4. Reduce the heat to low, cover, and let it simmer for about 15-20 minutes until the rice is tender.
  5. Fluff with a fork, fold in the toasted pine nuts, and serve.
