Instructions
- Heat the olive oil in a pan over medium heat. Add the chopped onion, turmeric, and cumin; sauté until the onion is translucent.
- Add the rice and stir until it’s well-coated with the oil and spices.
- Pour in the vegetable broth, sprinkle with salt and pepper, and bring to a boil.
- Reduce the heat to low, cover, and let it simmer for about 15-20 minutes until the rice is tender.
- Fluff with a fork, fold in the toasted pine nuts, and serve.
