Ingredients

- 2 Tbsp. olive oil
- ½ sweet onion (finely diced)
- 3 cloves garlic (finely minced)
- ¾ tsp. turmeric
- ¼ tsp. cumin
- ¼ tsp. paprika
- 1 ¼ tsp. salt (to taste)
- 2 ¼ cups water
- 1 ½ cups basmati rice (rinsed)
- 2 Tbsp. cilantro (finely chopped)
- 2 Tbsp. parsley (flat-leaf, finely chopped)
- ¼ cup pine nuts (toasted)
Instructions
- In a medium-sized pot over medium heat, add the olive oil and finely diced onion. Sauté for 2-3 minutes, or until the onion turns translucent.
- Add the minced garlic and continue to sauté for another minute until fragrant.
- Mix in the turmeric, cumin, paprika, and salt. Toast for about a minute until warm and aromatic.
- Pour in the water, scraping the bottom of the pot to release caramelized bits for enhanced flavor.
- Add the rinsed basmati rice, stirring gently to combine, and bring to a boil.
- Once boiling, cover with a lid and reduce the heat to low. Simmer for 20 minutes until rice is tender and fluffy.
- Remove from heat and stir in the chopped cilantro, parsley, and toasted pine nuts. Serve immediately.
Notes
This rice can be prepared ahead of time and stored in the fridge for up to 3 days. Reheat before serving.
