Description

A comforting and nutritious Mediterranean-inspired dish featuring rice and chickpeas, perfect for any season.


Ingredients

  • 1 cup long grain rice
  • 1 can chickpeas, drained and rinsed
  • 2 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • 1 cup fresh herbs (such as parsley and cilantro), chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the long grain rice and toast for 2-3 minutes, stirring occasionally until it’s golden and fragrant.
  3. Pour in the vegetable broth or water and bring to a gentle boil.
  4. Stir in the chickpeas, lemon juice, salt, and pepper.
  5. Reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and all the liquid is absorbed.
  6. Remove from heat and fluff with a fork.
  7. Stir in fresh herbs and serve warm.
