Ingredients

- 4 boneless chicken breasts
- 2 tbsp olive oil
- Juice & zest of 1 lemon
- 3 garlic cloves, minced
- 1 tsp oregano
- 1 tsp thyme
- Salt & pepper to taste
- 1 can artichoke hearts, quartered
- 1/2 cup green olives, sliced
- 1/2 cup cherry tomatoes, halved
- Fresh parsley for garnish
Instructions
- In a small bowl, combine the lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper. Whisk until well blended.
- Place the chicken breasts in a large bowl or resealable bag and pour the marinade over them, ensuring they are fully coated. Allow the chicken to marinate for 30 minutes.
- Preheat your oven to 375°F (190°C) as the chicken marinates.
- In a large skillet over medium heat, sear the marinated chicken for 4–5 minutes on each side, or until golden brown.
- Once seared, add the quartered artichoke hearts, sliced green olives, and halved cherry tomatoes to the pan. Stir gently to incorporate everything.
- Transfer the skillet to the preheated oven and bake for an additional 25–30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and garnish with fresh parsley before serving.
Notes
Great for meal prep. Marinate chicken up to 24 hours in advance. Store leftovers in an airtight container in the refrigerator for up to three days.
