Description

A zesty Mediterranean Chicken Dish that’s simple to prepare and bursting with vibrant flavors, perfect for a quick weeknight dinner.


Ingredients

Scale
  • 4 boneless chicken breasts
  • 2 tbsp olive oil
  • Juice & zest of 1 lemon
  • 3 garlic cloves, minced
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt & pepper to taste
  • 1 can artichoke hearts, quartered
  • 1/2 cup green olives, sliced
  • 1/2 cup cherry tomatoes, halved
  • Fresh parsley for garnish

Instructions

  1. In a mixing bowl, combine the juice and zest of the lemon, olive oil, minced garlic, oregano, thyme, salt, and pepper. Whisk together until well mixed.
  2. Place the chicken breasts into the marinade, coating them generously. Let marinate for 30 minutes.
  3. Heat a skillet over medium-high heat and sear the marinated chicken for 4–5 minutes on each side until golden-brown.
  4. Add the artichoke hearts, olives, and cherry tomatoes into the skillet.
  5. Transfer the skillet to the preheated oven and bake at 375°F for 25–30 minutes until the chicken is cooked through.
  6. Sprinkle fresh parsley over the top before serving. Enjoy!

Notes

Marinate the chicken longer for enhanced flavor. Leftovers can be stored in an airtight container for up to three days.
