Ingredients

- 4 boneless chicken breasts
- 2 tbsp olive oil
- Juice & zest of 1 lemon
- 3 garlic cloves, minced
- 1 tsp oregano
- 1 tsp thyme
- Salt & pepper to taste
- 1 can artichoke hearts, quartered
- 1/2 cup green olives, sliced
- 1/2 cup cherry tomatoes, halved
- Fresh parsley for garnish
Instructions
- In a mixing bowl, combine the juice and zest of the lemon, olive oil, minced garlic, oregano, thyme, salt, and pepper. Whisk together until well mixed.
- Place the chicken breasts into the marinade, coating them generously. Let marinate for 30 minutes.
- Heat a skillet over medium-high heat and sear the marinated chicken for 4–5 minutes on each side until golden-brown.
- Add the artichoke hearts, olives, and cherry tomatoes into the skillet.
- Transfer the skillet to the preheated oven and bake at 375°F for 25–30 minutes until the chicken is cooked through.
- Sprinkle fresh parsley over the top before serving. Enjoy!
Notes
Marinate the chicken longer for enhanced flavor. Leftovers can be stored in an airtight container for up to three days.
