Instructions
- Heat a non-stick skillet over medium heat and add a little olive oil if desired, letting it glisten in the warm pan.
- Crack the eggs into the skillet, scrambling lightly until just set and tender.
- Add the spinach to the eggs, watching it wilt and turn vibrant green.
- Remove from heat and stir in crumbled feta, salt, and pepper.
- Toast your bread or pita until golden.
- Layer the scrambled egg mixture on toast and top with fresh tomato slices.
