Description

A cozy and nutritious breakfast sandwich made with scrambled eggs, feta cheese, fresh spinach, and tomato, served on whole grain bread or pita.


Ingredients

  • 2 eggs
  • 1/4 cup feta cheese, crumbled
  • 1 tomato, sliced
  • 1 cup fresh spinach
  • 1 whole grain bread or pita
  • Salt and pepper to taste
  • Olive oil (optional)

Instructions

  1. Heat a non-stick skillet over medium heat and add a little olive oil if desired, letting it glisten in the warm pan.
  2. Crack the eggs into the skillet, scrambling lightly until just set and tender.
  3. Add the spinach to the eggs, watching it wilt and turn vibrant green.
  4. Remove from heat and stir in crumbled feta, salt, and pepper.
  5. Toast your bread or pita until golden.
  6. Layer the scrambled egg mixture on toast and top with fresh tomato slices.
  7. Serve warm and enjoy!

Notes
