Description

Ingredients

  • 4 medium russet potatoes, peeled and cubed
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup cherry tomatoes, halved

  • 1 cup sour cream or Greek yogurt
  • ½ cup green onions, chopped
  • 1 packet taco seasoning
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, bring water to a boil. Add the cubed potatoes and cook until tender, about 15 minutes. Drain and return to the pot.
  2. Add olive oil, salt, and pepper to the potatoes. Mash them until creamy and fluffy. Adjust seasoning as needed.
  3. In a separate bowl, combine black beans, corn, cherry tomatoes, and taco seasoning. Stir until everything is well mixed.
