- 2 slices of bread of choice (whole grain, sourdough, or rye)
- 1 ripe avocado
- 1 medium cucumber, thinly sliced
- 1/2 cup fresh leafy greens (lettuce, spinach, or arugula)
- 1/4 cup cherry tomatoes, halved (optional)
- 2 tbsp red onion, thinly sliced
- 1 tbsp fresh herbs (dill, basil, or cilantro), chopped
- 1 tsp lemon juice
- Salt and pepper to taste
- 1 tsp olive oil or favorite sandwich spread (optional)
Instructions
- If you prefer a bit of crunch, start by lightly toasting the bread slices.
- In a bowl, mash the ripe avocado until creamy. Squeeze in the lemon juice, and season it with salt and pepper to taste.
- Spread the mashed avocado generously on one side of each bread slice.
- Layer the cucumber slices over the avocado spread.
- Add a handful of fresh leafy greens, followed by the sliced red onions and cherry tomatoes if using.
- Sprinkle your choice of fresh herbs on top.
- If you’re feeling a little extra, drizzle a little olive oil or your favorite sandwich spread on top.
- Close the sandwich with the other bread slice and press down gently.
- Cut the sandwich in half and serve immediately.
Notes
To maintain the freshness of the avocado, assemble the sandwich right before serving. Store leftovers in an airtight container.
