Description

A delicious and fresh sandwich featuring creamy avocado and crisp cucumber, perfect for quick lunches or snacks.


Ingredients

Scale
  • 2 slices of bread of choice (whole grain, sourdough, or rye)
  • 1 ripe avocado
  • 1 medium cucumber, thinly sliced
  • 1/2 cup fresh leafy greens (lettuce, spinach, or arugula)
  • 1/4 cup cherry tomatoes, halved (optional)
  • 2 tbsp red onion, thinly sliced
  • 1 tbsp fresh herbs (dill, basil, or cilantro), chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 1 tsp olive oil or favorite sandwich spread (optional)

Instructions

  1. If you prefer a bit of crunch, start by lightly toasting the bread slices.
  2. In a bowl, mash the ripe avocado until creamy. Squeeze in the lemon juice, and season it with salt and pepper to taste.
  3. Spread the mashed avocado generously on one side of each bread slice.
  4. Layer the cucumber slices over the avocado spread.
  5. Add a handful of fresh leafy greens, followed by the sliced red onions and cherry tomatoes if using.
  6. Sprinkle your choice of fresh herbs on top.
  7. If you’re feeling a little extra, drizzle a little olive oil or your favorite sandwich spread on top.
  8. Close the sandwich with the other bread slice and press down gently.
  9. Cut the sandwich in half and serve immediately.

Notes

To maintain the freshness of the avocado, assemble the sandwich right before serving. Store leftovers in an airtight container.
