Description

A refreshing no-bake dessert layered with creamy lemon goodness and juicy blueberries, perfect for summer gatherings.


Ingredients

Scale
  • 1 package lemon cookies
  • 2 cups blueberries
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups whipped cream or whipped topping
  • 1 cup lemon curd
  • 1/2 cup milk
  • Zest of 1 lemon
  • 1 tsp vanilla extract

Instructions

  1. Combine the softened cream cheese, powdered sugar, lemon zest, and vanilla extract in a mixing bowl until smooth.
  2. Fold the whipped cream into the cream cheese mixture until light and fluffy.
  3. Prepare a 9×13 inch dish for layering.
  4. Layer the bottom with lemon cookies.
  5. Spread half of the lemon curd over the cookies.
  6. Add half of the cream cheese mixture on top of the lemon curd layer.
  7. Sprinkle half of the blueberries over the cream cheese layer.
  8. Repeat the layers: another layer of lemon cookies, remaining lemon curd, rest of the cream cheese mixture, and finish with remaining blueberries.
  9. Cover and refrigerate for at least 240 minutes or overnight.
  10. Serve chilled and enjoy!

Notes

Best made a day in advance for optimal flavor. Store leftovers in the refrigerator for up to 3 days.
