Delightful no-bake fat bombs blending creamy cheesecake with fresh strawberries, perfect for a keto-friendly treat.


Ingredients

Scale
  • 1 cup cream cheese, softened
  • 1/2 cup unsweetened almond butter
  • 1/4 cup erythritol (or any keto-friendly sweetener)
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and diced
  • 2 tablespoons lemon juice
  • Pinch of salt

Instructions

  1. Beat the softened cream cheese until creamy and smooth.
  2. Add the unsweetened almond butter and mix until well combined.
  3. Blend in the erythritol, vanilla extract, and a pinch of salt.
  4. Fold in the diced strawberries and lemon juice.
  5. Line a mini muffin tin or silicone molds with cupcake liners.
  6. Spoon the mixture into each cavity, pressing down gently.
  7. Place the tray in the freezer for 1-2 hours, until firm.
  8. Pop them out of the molds and enjoy!
