Ingredients

  • 30 grams Almond Flour
  • ⅓ teaspoon Xanthan Gum
  • 2 tablespoon Butter
  • 1 tablespoon Low Carb Sugar Substitute, granulated
  • ¼ teaspoon Salt
  • 1 Egg
  • ½ teaspoon Vanilla Extract
  • 1 teaspoon Baking Powder
  • ⅓ cup Low Carb Sugar Substitute, powdered (for glaze)
  • ½ teaspoon Heavy Cream (for glaze)
  • ⅓ teaspoon Vanilla Extract (for glaze)
  • 1 tablespoon Water (if needed for glaze)

Instructions

  1. Preheat the oven to 390°F (200°C) and line a baking pan with baking paper.
  2. Combine almond flour, xanthan gum, salt, granulated sugar substitute, and baking powder in a mixing bowl.
  3. Melt the butter over low heat, then add the vanilla extract. Fold in the flour mixture until a dough forms.
  4. Allow the dough to cool to room temperature, then mix in the egg until it reaches an elastic consistency.
  5. Cover the dough with a tea towel and let it rest for 15-20 minutes.
  6. Shape the dough into small balls and place them on the prepared baking pan.
  7. Bake for 10 minutes, then reduce the temperature to 355°F (180°C) and bake for an additional 5-10 minutes until golden brown.
  8. For the glaze, sift powdered sugar substitute into a bowl. Mix in heavy cream, vanilla extract, and water until a thick yet pourable consistency is achieved.
  9. Roll the baked donut balls in the glaze and serve warm.

Notes

You can refrigerate the dough in advance and bake fresh just before serving for a warm treat.
