A cozy one-pot meal that combines ground beef, potatoes, and cheesy goodness, perfect for a family dinner.

- 1 lb ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4–5 medium potatoes, thinly sliced
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup beef broth or water
- 1/4 cup milk (optional, for creaminess)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with cooking spray or olive oil.
- Heat the olive oil over medium heat in a large skillet. Add the ground beef and cook, breaking it apart with a spoon, until browned (about 5-7 minutes).
- Add the chopped onion and minced garlic to the skillet with the beef and cook until the onion becomes soft (3-4 minutes).
- Layer the sliced potatoes on top of the ground beef in the baking dish.
- Sprinkle the potatoes with salt, pepper, Italian seasoning, and paprika.
- Sprinkle the shredded cheddar and grated Parmesan cheese over the beef and potatoes.
- Pour the beef broth/ water around the edges of the casserole. Optionally drizzle with milk.
- Cover with aluminum foil and bake for 30 minutes, then remove the foil and bake for an additional 15-20 minutes.
- Garnish with fresh parsley and serve hot!
Notes
This casserole can be prepared a day in advance and stored in the fridge. Leftovers can be kept in an airtight container for 3-4 days.
