- ½ cup coconut oil, melted
- ½ cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup dark chocolate chips (or dairy-free)
- Optional: ½ cup chopped nuts or dried fruit
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the melted coconut oil, maple syrup (or honey), and vanilla extract in a medium bowl until smooth.
- Combine the almond flour, oats, baking soda, and salt in a large mixing bowl. Stir well.
- Pour the wet mixture into the dry mixture and stir gently until just combined.
- Fold in the dark chocolate chips (and nuts or dried fruit, if using).
- Scoop heaping spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden.
- Cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
