Ingredients

  • ½ cup coconut oil, melted
  • ½ cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup dark chocolate chips (or dairy-free)
  • Optional: ½ cup chopped nuts or dried fruit

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the melted coconut oil, maple syrup (or honey), and vanilla extract in a medium bowl until smooth.
  3. Combine the almond flour, oats, baking soda, and salt in a large mixing bowl. Stir well.
  4. Pour the wet mixture into the dry mixture and stir gently until just combined.
  5. Fold in the dark chocolate chips (and nuts or dried fruit, if using).
  6. Scoop heaping spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
