Description

A cozy and comforting meal featuring tender garlic herb chicken, creamy mashed potatoes, and sweet glazed carrots, perfect for weeknight dinners or special occasions.


Ingredients

Scale
  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and diced
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, sliced
  • 2 tablespoons brown sugar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil over medium heat and season chicken breasts with garlic, thyme, rosemary, salt, and pepper.
  3. Sear the chicken for about 6-7 minutes on each side until golden brown.
  4. Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through.
  5. Bring a pot of salted water to a boil and add the diced potatoes.
  6. Drain and mash the potatoes with milk and butter until creamy.
  7. Melt butter in another pan, add sliced carrots and brown sugar, and sauté until tender.
  8. Serve the chicken with mashed potatoes and glazed carrots.

Notes

For a richer flavor, stir in roasted garlic when mashing potatoes. Feel free to substitute vegetables or herbs as desired.
