- 4 chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 pounds potatoes, peeled and diced
- 1/2 cup milk
- 4 tablespoons butter
- 1 pound carrots, sliced
- 2 tablespoons brown sugar
Instructions
- Preheat your oven to 400°F (200°C).
- Heat olive oil over medium heat and season chicken breasts with garlic, thyme, rosemary, salt, and pepper.
- Sear the chicken for about 6-7 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through.
- Bring a pot of salted water to a boil and add the diced potatoes.
- Drain and mash the potatoes with milk and butter until creamy.
- Melt butter in another pan, add sliced carrots and brown sugar, and sauté until tender.
- Serve the chicken with mashed potatoes and glazed carrots.
Notes
For a richer flavor, stir in roasted garlic when mashing potatoes. Feel free to substitute vegetables or herbs as desired.
