A quick and delicious side dish featuring sautéed garlic, fresh green beans, and mushrooms, perfect for busy weeknight dinners.

- 1 pound fresh green beans, trimmed
- 8 ounces mushrooms, sliced
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
- Prepare green beans by trimming the ends and rinsing them thoroughly under cold water. Set aside.
- Heat a large skillet over medium heat and add olive oil and 2 tablespoons of butter, allowing the butter to melt.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Toss in the sliced mushrooms and cook for 4-5 minutes, stirring occasionally, until they begin to brown and soften.
- Add the prepared green beans, sprinkling with salt and pepper to taste, and stir to combine.
- Cover the skillet and let the green beans cook for about 5-7 minutes, or until tender but still crisp, stirring occasionally.
- Remove the lid and add the remaining tablespoon of butter, stirring until it melts and coats the vegetables.
- Add lemon juice to the skillet and stir well to combine.
- Transfer the sautéed green beans and mushrooms to a serving dish and garnish with chopped parsley if desired.
Notes
You can prepare the green beans and mushrooms a day ahead and store them in the fridge. Just sauté before serving. Feel free to substitute olive oil with avocado oil or use different types of mushrooms.
