Description

A quick and delicious side dish featuring sautéed garlic, fresh green beans, and mushrooms, perfect for busy weeknight dinners.


Ingredients

  • 1 pound fresh green beans, trimmed
  • 8 ounces mushrooms, sliced
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare green beans by trimming the ends and rinsing them thoroughly under cold water. Set aside.
  2. Heat a large skillet over medium heat and add olive oil and 2 tablespoons of butter, allowing the butter to melt.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Toss in the sliced mushrooms and cook for 4-5 minutes, stirring occasionally, until they begin to brown and soften.
  5. Add the prepared green beans, sprinkling with salt and pepper to taste, and stir to combine.
  6. Cover the skillet and let the green beans cook for about 5-7 minutes, or until tender but still crisp, stirring occasionally.
  7. Remove the lid and add the remaining tablespoon of butter, stirring until it melts and coats the vegetables.
  8. Add lemon juice to the skillet and stir well to combine.
  9. Transfer the sautéed green beans and mushrooms to a serving dish and garnish with chopped parsley if desired.

Notes

You can prepare the green beans and mushrooms a day ahead and store them in the fridge. Just sauté before serving. Feel free to substitute olive oil with avocado oil or use different types of mushrooms.
