Description

A comforting one-pan dish of garlic butter orzo with tender mushrooms and vibrant spinach, perfect for busy weeknights.


Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons garlic, minced
  • 3 tablespoons butter
  • 8 ounces mushrooms, sliced
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a large pan, melt the butter over medium heat until fragrant.
  2. Add the minced garlic and sliced mushrooms; sauté until tender, about 4-5 minutes.
  3. Stir in the orzo pasta, toasting for 1-2 minutes.
  4. Pour in 2 cups of water or broth, bring to a boil, then reduce heat to simmer. Cover and cook until al dente, about 8-10 minutes.
  5. Add the spinach in the last few minutes, stirring until wilted.
  6. Season with salt and pepper, serve topped with Parmesan cheese if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of water.
