- 1 cup orzo pasta
- 2 tablespoons garlic, minced
- 3 tablespoons butter
- 8 ounces mushrooms, sliced
- 2 cups fresh spinach
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pan, melt the butter over medium heat until fragrant.
- Add the minced garlic and sliced mushrooms; sauté until tender, about 4-5 minutes.
- Stir in the orzo pasta, toasting for 1-2 minutes.
- Pour in 2 cups of water or broth, bring to a boil, then reduce heat to simmer. Cover and cook until al dente, about 8-10 minutes.
- Add the spinach in the last few minutes, stirring until wilted.
- Season with salt and pepper, serve topped with Parmesan cheese if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of water.
